4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) Observed a bucket of sanitizer with 100 ppm. There was not wiping cloth in it and had not seen any employee using it. Quat ammonia should have a concentration of 200 ppm to 400 ppm. CDI- Staff was able to work on dispenser was able and sanitizer was coming out at correct concentration. Make sure staff are regularly checking sanitizer solution. |
