General CommentsREHS and PIC thermometers were checked for proper calibration in ice water and both were 32F. REHS thermometer was sanitized at the start of and throughout the inspection.

These restraints must be designed and worn to effectively prevent hair from contacting exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles.

Walk in ambient air was 44.7F. REHS advised opening the freezer door to assist in lowering the temp, which decreases to 40.4F. Good Repair and Proper Adjustment- (A) EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 and 4-2. (B) EQUIPMENT components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. (C) Cutting or piercing parts of can openers shall be kept sharp. Walk in verification is required in 3 days.
