3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed two (2) TCS, non date mark exempt foods (egg white mix and egg mix cartons) with no date marks. Per conversation, PIC believed these were to be treated as raw animal food (to remain unmarked and/or to be used within 24 hours.) All other required foods were date marked. CDI - PIC confirmed dates of opening (day of inspection, 11/06) and items were date marked. EHS reviewed date marking expectations with PIC.
