3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed two (2) portions of food, (cooked chicken and Lo mein noodles) date marked as having been prepared on day of inspection, actively cooling with covered lids in standing RIC and one (1) portion of TCS food (cooked chicken) cooling prep unit underside.
