Observed raw eggs over RTE milk, cheese products. CDI-PIC moved eggs to the bottom shelf and EHS discussed shelf storage. EHS pointed out they have a storage order sheet on the prep unit. |

4-101.11 (A) - (E ) Food contact surfaces shall be (A) Safe P, (B) Durable, Corrosion-Resistant, (C ) sufficient in weight and thickness to withstand repeated washing (D) Smooth and easily cleanable, and (E) Resistant to damage. Observed a wooden shelf in the back for dry storage, the shelves are not stained, sealed or painted. PIC has placed a plastic table cloth over the shelves. This material is not easily cleanable. |
