3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P For more information please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Safe Food Temperatures https://youtu.be/tXP09IK-1TQ . Observed all TCS foods in flip top cooler above 41f with items observed to be as high at 60f. See chart. Ambient temperature of unit 38f. Upon discussion with PIC, all items had been stocked into the cooler from WIC approximately 30 min prior to EHS arrival. PIC noted that stocking process may have taken some time to complete. CDI - EHS monitored food to ensure all items cooled back to 41f during inspection. Do not let TCS food sit out of refrigeration for extended periods of time. EHS recommends filling containers and evaluating date marking while in the cooler to prevent stocking process from taking too long. |
