Salsa prepared earlier today was not cooling from 50 F. Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. CDI - salsa cups removed and placed in ice to rapidly cool. |
