The day of preparation shall be counted as Day 1. EHS observed milk that didn't have a date mark that had been opened for more than 24 hours. CDI: PIC voluntarily added a date mark. |

3-501.19 Time as a Public Health Control (P) (Pf) (1) Written procedures shall be prepared in advance, maintained in the FOOD ESTABLISHMENT and made available to the REGULATORY AUTHORITY upon request that specify: Pf (a) Methods of compliance with Subparagraphs (B)(1)-(4) or (C)(1)-(5) of this section; Pf and (b) Methods of compliance with § 3-501.14 for FOOD that is prepared, cooked, and refrigerated before time is used as a public health control. EHS observed a written policy regarding time as a public health control, but the written log was not filled out for the food items. The food items that did not have a temperature of 135F and did not have the time put out in the log were discarded. EHS will return 5/26/26 to ensure the time log is being filled out and followed. |
