Fried chicken on the rear of the drop line was found under 135F. All reheated and now 200F. Wedges found under the hot light at 115-135F on the hot line. All redropped and reheated to 200F. Place tray closer to heat source and keep 135F. Tray raised closer to hot light under the large hot bar line. Ensure 135F temps and above are held or place on times holding for 4 hrs. Manager states they will place on times for back up if temps fall under 135F. Will discuss holding cabinets being upgraded and times as in tphc measures for better control if 135F temps cant be maintained. Maintain greater than or equal to 135F or use times for quality control. Will document. CDI
