General CommentsSome improvements observed since last unannounced inspection. Time as a public health control (up to 4 hours) used on the following items on serving line to be discarded by 2:50PM: cheese pizza, Buffalo pizza and Hoagies. The following item to be discarded by 4:40PM Mozzarella sticks. The following item to be discarded at 2:15PM salads. The following item to be discarded at 2:45PM beans. Food service permit, food equipment, food equipment layout, menu, emails, phone numbers, sewer, water source, etc. remains the same as last school year. Red light observed flashing attached to septic system building. This is a repeat observation. Mr. Oldham contacted septic operator John Poteat during visit. Mr. Poteat states that when tank gets low of water, the light flashes. Mr. Poteat stated the Adam Pickett, septic operator, will visit site later today and if light is flashing Mr. Pickett will reset light. Mr. Poteat stated that septic equipment room has had some work recently. Three ring binder with the following food educational brochures given: Food employee reporting agreement, Vomiting & Diarrhea Clean-up Plan, I'm gloving it, Food thermometer calibration tips, Food Code Fact Sheet #20, Time as a Public Health Control Guidelines, Prevent Bare Hand Contact, Top 5 CDC Risks Factors Contributing to Foodborne Illness, Employee Health Policy Requirements Poster, Proper Holding Temperatures, Multilanguage Wash Your Hands sticker, Cool Food Fast for Food Safety and Cooling log. Also, digital food meat thermometer given to operator. It is very important to discuss employee health reporting requirements with food service staff often to help prevent food borne illness. Educational items were discussed.
