4-302.13 (B) Temperature Measuring Devices, Manual and Mechanical Warewashing: (Pf) Observed that the irreversible thermometer for the high temperature dish machine was not turning on at time of inspection. In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature. CDI: The battery was replaced and the thermometer was functioning properly before the end of the inspection. |
