General CommentsPresent during inspection were Cindy Pierce, REHS Harnett County and Thomas Jumalon, Regional REHS. Operator was questioned about many facets of operation in both English and Spanish. Operator indicated that food was stored and prepared at his home. He was told no food storage, preparation, dry storage etc. was allowed at his home. All food requiring date marks were marked with today's date. When asked, operator indicated all foods including multiple types of meats as well as rice and beans, were cooked that morning. Operator first indicated that additional portions of food were left over and would be dated with tomorrow's date when placed on unit. All items leftover shall be datemarked with date of prep or date of disposal. Operator indicated items were left out at room temperature to cool. Cooling parameters were reviewed with operator. Operators could not answer questions regarding holding or final cook temperatures. These values were reviewed with the operator. Operator indicated he uses "grey" hose at the exterior can wash to fill his potable water tank. Unit shall provide a food grade hose for water portage.
