EHS observed employee cook chicken, potatoes, and mixed vegetables, place on a sheet trays on speed rack, and immediately place speed rack into WIC to begin the cooling process while items were still steaming. EHS recommends to allow items to stop steaming prior to placing in WIC to avoid equipment malfunction. EHS observed WIC temperature quickly rise to 46F due to hot items being placed in WIC. |
