- Observed rice pudding in WIC, slice tomatoes, cut lettuce, slice cheese, dice ham and turkey in flip top holding temperature above 41F. CDI- PIC volunteer to discard items at the time of inspection. EHS and PIC discussed in detail about cooling properly to keep and maintain food cold while storing.
