Found that the top freezer cabinets at the fryer do not seal fully and an hand can reach through. This allows for air escape which may be why hush puppies were found thawed in this equipment. Employee states the hush puppies have been in the cooler for less than 30 minutes. Additionally, PIC states that the hush puppies and corn dogs are thawed before moved to this cooler. The onion rings and chicken tenders farther back were frozen to the touch. |

Found the gasket on the walk in cooler is split. PIC states that the gasket has been ordered. Additionally, the top freezer drawers near the fryers could not be fully closed to seal.
4-205.10 - Food Equipment, Certification and Classification: Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer's intended use and certified or classified for sanitation by an ANSI-accredited certification program.
A coffee maker was found at the milk shake station that was labeled as household use only. Employee states it is used to make coffee milkshakes. CDI by PIC removing it from the food prep area. |
