CDI - PIC primed dish machine to above 50 ppm and quat sanitizer emptied and refilled to correct concentration. EHS educated PIC about checking concentration of sanitizing solutions before use to ensure proper concentration. -1.5-

PIC showed EHS time stamp stickers that had been prepared before inspection but not placed on food. CDI - Stamps placed on food and EHS advised PIC that continued non-compliance with written procedure for wings will result in facility not being able to use TPHC until it can demonstrate consistently following written procedure. REPEAT -1.5- POINTS NOT ESCALATED TODAY AS THE CONDITION WAS GREATLY IMPROVED OVER THE LAST INSPECTION.

Per PIC, these were thawed under cold running water this morning. EHS advised PIC to check the temperature of cold water to ensure 70F or below. If temperature of cold water is above 70F, then use another thawing method such as thawing under refrigeration EHS also advised PIC to check the temperature of food during thawing to ensure food stays below 41F. -0-
