3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf For more information please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Cooling Food Safely https://youtu.be/P6x8b1ZVOxU. Observd chicken and pork in the WIC and beef and pork in ice baths cooling incorrectly. The foods in the WIC were wrapped tightly and did not allow for air flow, and the ice baths were too shallow and did not allow for proper cooling. CDI-all plastic wraps were taken off of the cooling foods. Foods in the ice baths were pushed down into the pan and more ice was added so that ice surrounded the pans and allowed for cooling.
