3-401.11 Cook raw animal foods to required temperatures. Do not interrupt the cooking process without approved procedures. -P Observed chicken breast par-cooked, but procedures were not followed. Par-cooked chicken were sitting over the flat top grill at 98F when procedure stated for product to be cooled in the walk in cooler. Per PIC, chicken had just got done cooking and placed in the pan before inspection started. CDI: chicken moved to the walk in cooler to cool. REPEAT VIOLATION -3- |
