Observed PIC unable to answer operational questions and had several priority item violations today. CDI EHS educated PIC on corrections needed and advised that he obtain CFPM certification. PIC is new to this position. She was putting the date that she portioned them out instead of the date the Cole slaw was made. CDI EHS educated PIC and he corrected the date mark.
