3-501.14 Cooling (P) Breakfast burritos prepped for tomorrow's service were wrapped and tightly packed into sealed plastic containers while they were still hot. Burritos prepared at 4:02am were still 48F. Another batch from 6:20am ranged from 41-45 in the same tightly sealed container. Hot TCS foods shall be cooled to 70F within 2 hours and then to 41F or below within the next 4 hours. As inspection tool place around 3pm, PIC voluntarily discarded burritos. |

Vent containers, spread the food out in shallow pans, utilize the walk in freezer, or other approved method to rapidly cool hot TCS foods. CDI - Burritos were voluntarily discarded by PIC. No points taken as this is not a repeat and points were already deducted under #20 |

5-202.13 Backflow Prevention, Air Gap.(P) The spray nozzle at the 3 comp sink was hanging below the rim of the sink basin. An air gap between the water supply inlet and the flood level rim of the PLUMBING FIXTURE, EQUIPMENT, or nonFOOD EQUIPMENT shall be at least twice the diameter of the water supply inlet and may not be less than 25 mm (1 inch). CDI - PIC hung nozzle on hook to raise it. Recommend getting hose adjusted to prevent regular reoccurrence. |
