3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed 5 large containers of chopped lettuce cooling with tight fitting lids on in the reach in cooler. CDI-All containers were relocated to shallower containers without tops and placed into the walk in cooler to allow for rapid cooling. -REPEAT-
