3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed facility has blast chiller however, several items that were prepped today stored in plastic containers with lids tightly fitting lids. PIC stated that employees are to use blast chiller to cool foods down then store in plastic containers. EHS suggested that staff be retrained to assure all staff are cooling foods down using blast chiller and doing temp checks to ensure food has properly cooled. CDI.. Food was sent back to blast chiller to properly cool.
