CDI - PIC voluntarily discarded.PIC reminded that permit stated food shall be maintained at or above 135F to be cooled and held for next day service. EHS also advised PIC to implement a hot holding log and take temperature at end of service to ensure foods have been held at or above 135F for next day service. -1.5- |
