3-501.15 Cooling Methods (Pf). Observed pans of Mac and cheese cooling while covered and stacked on top of one another in the catering walk in cooler. Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Lids were taken off of the metal trays as the corrective action. |
