4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P): Observed spray bottle of sanitizer with concentration very high; test strip turned dark then bleached out. Chlorine sanitizer spray used for potential food contact surfaces needs to be between 50 and 100 ppm. Sanitizer was diluted properly during inspection, CDI.
