CDI-PIC replaced the regulaltor piece in the mixing device. The new solution measured 200ppm in concentration. When using chemical sanitizers, the solutions shall meet manufacturer's specified concentration and be a minimum temperature of 75F. ~REPEAT~ NO POINTS ~ Due to no observation of using the solution.

Staff stated they took the items directly from the walk-in and placed them in the prep cooler. All other items in both the walk-in and prep cooler were below 41F. Through conversation, learned the prep units are turned off at night and turned on after opening. CDI- Items cooled back to 41F during the inspection. Recommended allowing the prep coolers to cool fully prior to placing foods in the units. When held cold, TCS foods shall be maintained at 41F, or below, at all times.
