General CommentsMaintain sanitizer at 50ppm-200ppm. Sanitizer in the spray bottle exceeded 200 ppm and bleached out the test strip. Sanitizer was remade to 200 ppm Cl. Store single service items with the food portion protected. Some plates were turned with the food contact portion turned up. Maintain scoops with handles. Keep handles extended out of the food product.
