3-501.19 (A) (1) Written procedures for Time as a Public Health Control shall be prepared in advance, maintained in the establishment, and made available for the Health Department upon request. Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). -Pf.
Observed a few savory scones (zucchini and cheddar) held out at room temp in the pastry case without TPHC procedures. PIC stated that these were placed in the case this morning at 6:30AM.
CDI: PIC voluntarily discarded savory scones and EHS provided PIC with TPHC procedures to have for savory scones moving forward.

Observed scoop handle stored inside cambro full of granola commingled in the food product. Observed scoop handle stored inside rolling bin of granulated sugar commingled in the food product.
Ensure all scoop handles are stored above the top of the non-TCS food to prevent contamination. |
