4-501.11 Good Repair and Proper Adjustment - Equipment (C) The door on the convection oven used for bacon, does not stay closed. It is kept shut by placing a pan in the handles. The left side of the cold drawers are held shut with duct tape due to problem with it sealing. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. |
