General CommentsDowns stairs space is now being used for un-opened dry goods and linens. Do Not Store items on the top self (top self is the cover for being under sewer/water lines). Continue keeping all items clean, protected, and off the floor. Facility is getting 3 deliveries a week and prepping items every day. Continue making sure all items properly stored, cooked, cooled, and dated. NO items out of date today. Continue hand washing training as prep and cooking are going on together more often. (No hand washing Violations noted today.) Facility is looking at adding breakfast. Make sure to keep items stream lined due to the limited space in walk-in and other coolers.
