3-202.11 Temperature (P) -TCS foods shall be received at cold (41F or less) and hot TCS foods (135F or above). Salad was 45F shortly after receiving. Per the facilities log, it was 42-43F upon being received. Per discussion with the PIC, the salad was prepped approximately 4 hours prior to the inspection. CDI by the voluntary discard of the salad by the PIC. If any TCS items are received higher than 41F and lower than 135F they should not be accepted. |
