General CommentsDuring inspection, EHS observed multiple TCS food items (Pico de gallo, cabbage slaw, Ono sauce (containing sour cream), and chipotle sauce) placed within the prep line drawers and underside storage directly from points of preparation, per conversation with the PIC. When observed, these items were seen cooling within necessary parameters for prepared TCS foods. To further improve cooling rate, as suggested by EHS, PIC and facility prepared bins from the facility ice bin and placing ice directly in the storage bin of sauce bottles, as well as preparing open ice bins for empty portions of prep unit drawers, so as to improve the ambient temperature of the closed cold holding equipment and improve cooling of Pico and cabbage slaw.
