2-102.12 (A) PIC shall demonstrate knowledge by being a certified food protection manager. Observed no CFPM on site during inspection. PIC stated they will be obtaining their CFPM certificate next week. Ensure someone with CFPM certification is on site during all hours of operation.

4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. -P Observed chlorine sanitizer in spray bottle at 10ppm. CDI-PIC added more bleach to spray bottle and tested again and concentration measured 100ppm.
