3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P)- Observed a box of beef that had been delivered earlier in the morning, temped at 45F. PIC stated it was delivered about an hour prior. Observed a pan of individual sauces on the server station that was sitting in another pan of ice, pan included ranch at 50F, bleu cheese at 50F, and sour cream at 47F, sauces were put out about 30 mins prior to checking temperature. CDI- Box of beef waws placed into the freezer, pan of individual sauce cups was placed in a prep cooler. |

Observed multiple house made sauces that included ingredients that require refrigeration with dates of 4/14, 4/16, and 4/22 (today 4/29). CDI- food items past date mark were voluntarily discarded. TCS foods held in establishment for more than 24 hours shall have a 7 day date mark including day of prep and discarded after the 7 days has passed. |
