The wiping cloth bucket had been filled using hot water, when tested the sanitizer read well above 400ppm quat, it was emptied and refilled with sanitizer made with room temperature water and it tested at 400ppm quat. The plumbing stand off holding the dish machine and sink drain line has come loose from the floor, resecure the plumbing stand off. Recaulk the drain board above the dish machine and repair paint where it is peeling. 6-501.11 - Repairing: Floors, walls, and ceilings including the attachments such as soap and towel dispensers; light fixtures; and heat/ac vents shall be maintained in good repair. |
