General CommentsPer permit conditions, facility is only permitted to cool based on the blast chiller being in the facility. Failure to use the blast chiller will result in facility not being permitted to cool food items and/or permit suspension. Foods must be cooled using appropriate cooling methods. Facility has added salmon to the menu. Salmon is fully cooked as it is ordered. Facility has added a chemical dish machine ECOLAB Model E-ULT. Per water calculator 91GPH is needed and current water heater can do 106GPH. EHS and PIC discussed the potential for adding Boba/bubble tea and what equipment would be required including additional ice machine/bigger ice machine, additional reach in cooler for the tea items/jellies, and a way to hold the boba either hot, cold or on time as boba is TCS.
