3-501.16 - Potentially Hazardous Food (Time/Temperature Control for Safety Food), Hot and Cold Holding: Observed multiple TCS items holding above 41F in the walk-in cooler (refer to temperature chart). The walk-in cooler had an ambient air temp of around 46F. Maintain TCS foods in cold holding at 41F or less. P
The PIC on duty showed the REHS an email that stated management is waiting for a part to arrive for the walk-in cooler. The part is expected to arrive late today (June 9) and should be installed the day after it arrives.
The TCS items holding at 47F were in small quantity therefore the PIC voluntarily discarded them. As an immediate correction, items holding 44F & 45F were moved to the reach under portions of the 2 front pizza prep coolers to be held there until the walk in cooler is in compliance. The pizza prep cooler closest to the cash register had an ambient air temp of 33F and the pizza prep cooler closest to the wall had an ambient air of 37F as verified with the REHS' thermometer during the inspection. The date marking life span of the TCS items that were moved to the front pizza prep coolers was shortened to 3 days instead of a max of 7 days.
Non-TCS items can be kept in the walk-in cooler and the REHS educated the PIC about what items are Non-TCS.

Also observed a bowl of salt and a bowl of black pepper near the pizza prep coolers that were also not labeled with names. 4-501.11 - Good Repair and Proper Adjustment: Observed that the walk-in cooler was not holding TCS items at or below 41F and had an ambient air temp of around 46F. Also observed that the walk in freezer is still not in use due to being out of order.
