3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf
Observed cooked portioned chicken, cooked portioned tortellini, portioned pre-cooked steak, and portioned pre-cooked pork cooling since 7/24/25 that had missed cooling window. All items had been in RIC wrapped in plastic bags in a deep, plastic container overnight. PIC stated cooling methods typically include cooling in WIC uncovered. PIC was unable to verify if foods had been cooled properly due to their absence in the previous days. PIC and EHS deduced improper temperatures were likely due to incomplete cooling due to RIC ambient temperature maintaining 38F.
CDI - PIC voluntarily discarded.
