General CommentsPIC explained they par-cook wings during Super Bowl and other high volume game days. They had procedures however the procedures are missing some key steps such as: how they monitor cooling, no label stating they product is raw, no procedures on corrections if the steps are done incorrectly and they do not have prior MCHD approval. They must request this for them to do. This is a GC and EHS will follow up about the corrections their procedures need.
