3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf. Observed no date marking on pan of queso. Label said "Use first." Observed pan of mini hot dogs with no date marking. CDI - both voluntarily discarded.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P. Observed expired foods and incorrectly labeled foods - sausage 12/31, cut tomatoes 12/31, pepperoni 12/30. PIC voluntarily discarded all. VR - verification required. Shelf Life chart from corporate has following allowed storage after opening: pepperoni 21 days, sausage 30 days, queso 28 days, hot dogs 2 weeks. PIC will speak to corporate, adjust dates. Inspector will revisit next week to verify corrections. |
