General CommentsEHS discussed internal policy on housemade pickles with PIC. PIC showed EHS the recipe card for the pickles and the date marking chart associated with the product. PIC stated that brine is prepared on the stove, cooled to at least 75F then added to the cucumbers. The item is then held for 2-4 days to allow for pickling. The product is then date marked and kept for an additional 5 days. EHS educated PIC on date marking for TCS foods. Once the hot brine is added to the cucumbers the product becomes TCS. The day the brine is added is day 1. EHS advised that brine could be added and product could sit for 2 days to pickle and then be date marked for 5 additional days for a total of 7 days. Pickles are not to be kept longer than 7 days, the day the brine is added is day 1. PIC stated they will discuss this further with upper management.
