General CommentsEHS observed six (6) packages of ROP salmon thawing in the WIC without being removed from ROP environment. PIC elaborated that these were personal food items and would not be sold to customers. Review of menu corroborated this explanation, as salmon is not included on menu. EHS and PIC discussed proper thawing of ROP fish to prevent contamination. EHS observed an effective date marking system in place throughout the kitchen. Further discussion with PIC elaborated that small containers of food kept in prep tops, including sliced ham on plates or cut melon in a single serving bowl, may not be date marked, as they will be held for less than 24 hours. Facility is encouraged to date mark all non exempt TCS foods, including cut melon, spinach, chopped and washed lettuce, and deli meats, should they be held for greater than 24 hours.
