General CommentsPIC stated that the TCS food items in the steam wells and under the hot lamps were supposed to be hot holding. However, the facility time stamps their hot items to have them discarded for quality purposes. Since they already time stamp and discard their items, EHS provided TPHC form to fully switch to TPHC.
