For milk cartons in mini cooler repeatedly seen to be above 41F, TPHC or pre-chilling milk substantially below 41F (ahead of placement in cooler for cold holding) is advised. Milk cartons in small cooler which is opened continuously are not good candidates for the current cold holding process, based on findings from the last two inspections. If cold holding is out at the next inspection, risk control plan maya result.
