PIC was unable to identify if it was cold or hot smoked salmon at the time of the inspection and package did not clarify how it was smoked. 33 0 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf - Observed a deep bin of portioned bags of risotto in the WIC that was cooling down after being portioned out. PIC stated it was cooked this morning and cooled in the blast chiller before being portioned out into the bags and placed into the bin in the WIC. The bags were observed with multiple stacked ontop of one another and deeply stored, which does not allow for adequate air flow to properly cool the product down. CDI - PIC placed the bags onto a sheet pan and into the blast chiller to rapidly cool.
