Observed sausage in hot hold at 80F. Right side of warming station was found to be out of order this morning and PIC has already notified maintenance to have repaired today. Breakfast wraps and sandwiches on hot hold were already moved to working side of warmers previous to inspection and are holding above 135F. Sausages are only held during breakfast hours and discarded after (6:30 to 9:30). EHS recommended facility places hot items on TPHC. CDI-Sausages were discarded at 9:30. Facility will not use warmer that is out of order until repaired. |
