General CommentsEHS observed steamed tacos on MFU. Per PIC, steamed tacos were added to the menu 2-3 months ago. Tacos include beans, potatoes, chicken, and chicharrones. PIC stated chicken is received raw in ready-to-cook form, beans are received in a can, potatoes are received unwashed and uncooked, and chicharrones are received fully cooked. Items are cooked the day of service in the morning at the commissary. No items are cooled. Each item is boiled separately and then placed on commercially bought tortillas to be transported hot to site for service. Tacos are kept in steam well during service and discarded at the end of the day. PIC stated a cooler was used to transport tacos today which is why they were not above 135F initially. EHS directed PIC to utilize a cambro or other hot holding transport equipment to maintain tacos hot at 135F or above during transport. PIC stated she already owns a cambro and will begin doing that. Coleslaw is also prepared for tacos. Per PIC, coleslaw mix is commercially bought. PIC boils mixture and adds seasonings. Coleslaw is prepared the day prior to service and cooled. EHS approves tacos and coleslaw with the described processes. Any future changes to menu or processes must be approved by health department prior to initiating changes. Inspection completed at flea market located at 9607 Albemarle Rd, Charlotte, NC 28227.
