3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P -Observed all foods in under-grill cold drawers above 41F (raw shrimp, breaded flounder, grilled flounder, tofu, chicken breast, marinated chicken, cooked steak, prepped cheese quesadillas). Observed ambient temperature of cold drawers at 45F. Observed bottom cold drawer unable to fully close. -PIC stated all food was placed into cold drawers at 9:30am. Because the food is within a 4-hour cooling window, PIC moved all food to WIC for rapid cooling. By end of inspection, EHS observed food cooling at sufficient rates to reach 41F within 4 hours. -CDI- After removing food from cold drawers, PIC cleaned cooler unit and removed ice block which was preventing drawer from fully closing. EHS observed drawer now able to fully close. EHS observed ambient temperature of cooler drop to 40F.
