Talked to the assistant manager. She thought that a certified manager was not required for this location. I explained that it was a requirement. The assistant manager told me that she would make sure the person in charge has the proper certifications by the next inspection.
10 0 Handwashing sinks supplied & accessible No No No 5-202.12 Provide at least 100F water at handsinks. The water temperature at the hand sink was 78 degrees. A work order was submitted to adjust the temperature to the proper temperature of at lease 112 degrees.
22 0 Proper cold holding temperatures No No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Have the reach in refrigerator checked. Ambient air temperature was 45 degrees. Must be set at 38 degrees to keep cold foods cold at 41 degrees.

They need to be repaired or the dumster replaced. 5-501.115 Discard items and litter stored in the waste areas and enclosures as they are not necessary to operation and maintenance. Observed several items stored around the dumpster that are considered a harborage to vermin. These items must be removed. These items will be evaluated on the next inspection.
