Arrange each type of food in equipment according to minimum internal cooking temperatures, storing those foods with higher final cooking temperatures below foods with lower final cooking temperatures so that cross contamination of one type with another is prevented. The raw chicken was relocated to correct the violation.

4-301.11 Cooling, Heating, and Holding Capacities-Equipment - Pf -- Observed a large pot of soup holding in a folding chair upon my entry, due to insufficient hot holding equipment. Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide proper hot/cold holding temperatures. The soup was placed on the back side grill top to hold hot as a temporary solution and an intent to suspend the permit will be given on the addition of menu items without prior approval from the health department. |

4-205.10 Food Equipment, Certification and Classification - C -- Discontinue the use of the temporary refrigerated trailer and ice cream freezers holding meats and foods for the MFU. EHS has been working with the owner to obtain sufficient and approved refrigeration to meet the needs of the mobile food unit and commissary. Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited certification program.
4-501.11 Good Repair and Proper Adjustment-Equipment - C -- Observed rusty legs on the prep table as well as prep sink. I also observed damage gasket on the left bottom door of prep unit. Equipment shall be maintained in good repair and components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

4-603.16 Rinsing Procedures - C -- Observed an employee rinse a utensil in an un approved area (prep sink & pan). Washed utensils and equipment shall be rinsed so that cleaning chemicals are removed by a separate water rinse after washing and before sanitizing if using a 3-compartment sink or a 3-step washing, rinsing, and sanitizing procedure in a warewashing system for clean-in-place equipment. This mobile unit does not have a 3 compartment sink and must take all utensils and dishes into the commissary to be properly washed, rinsed and sanitized. |
